Creamy Mushroom Pasta

Last nights dinner wasn’t a resounding success. First I should’ve bought green beans to go with it but didn’t think about it in time so we had to have peas. They didn’t work. Secondly I felt like there was something missing from the meal. It needed something…don’t know what but definitely something.

The menu came from the ‘value meals’ on the NHS Meal Planner website. It’s very easy to do, cheap & low fat and quick. If only I could figure out what to add to give it more taste…if I can’t then this one will have to removed from the meal planner. Any ideas? x

  1. I make a version of this often, which I absolutely love. Skip the olive oil (unnecessary calories and fat) and the creme fraiche, and instead stir through half a tub (or so) of Philadelphia light cream cheese and some salt. Then sprinkle with a bit of shredded parmesan before serving. Also, put a pinch of salt in the mushrooms while they’re cooking to really bring out their flavour.
