I often like something quite stodgy on a Sunday. Not eating meat makes roast dinners a bit sad & difficult, especially if you’re trying to watch your fat intake & can’t enjoy all the roast spuds!
Sweet Potato Shepherds Pie
This recipe contained two portions of vegetables & was incredibly healthy! This was another recipe from the NHS meal planner. It can be found in the main meals section. One thing I really like about this website is that it changes the amount of ingredients depending on how many people you are feeding. I find this really helpful as I’m not great at portion control!
I’ve had shepherds pie loads of times, both meaty & meat-free but this one tasted different. It was really nice and very filling. Perfect for winter days. x
