Another weekend, another set of healthy low-fat, full-of-goodness meals to make. I really like to have something of a treat on the weekend. And with chocolate & cake off the menu, meals have to be extra tasty despite my food rules.
Mixed Bean Chilli
I quite like chilli. My OH makes an amazing one with Quorn mince & tons of chillies. I’ve had mixed bean chillies before – some good, some bad. I’m not a massive fan of beans though. I find them quite dull & hate it when they’re cold. I had high hopes of this recipe though. I found it on VegWeb.com by Googling mixed bean chilli. It’s really easy to do & is so tasty. I added a touch of creme fraiche to the top. It made up for the fact that most of Twitter were having take aways! This was just as good if not better!
Pumpkin & Tomato Bake
First of all, I couldn’t find a pumpkin so we used squash. Secondly, this is weird. It kind of works, but it’s still weird. I don’t know if I’d have this again. I am so glad that I thought to make some roast spuds to go with it otherwise I would’ve been very disappointed with it. I got the recipe from the NHS Meal Planner in the Main Meals section. While there’s loads of good veg in here, it’s still odd. Chilli sauce & butternut squash? Hmmmmm… Thank goodness for the roasties – always a winner! x
I have been really busy doing supply teaching this week & was really tired at the end of each day. I could’ve easily got a take away any & every evening! (I have no will power when it comes to Chinese!) but, as we’re trying to have each of the meals on the meal planner throughout January, I resisted & persevered with healthy cooking. As I’ve been busy I haven’t had time to blog about the meals until now & have been so hungry by the time dinner has been ready that I haven’t always taken a picture!
Wednesday night was 10-minute Vegetable Rice from Cook Vegetarian. The supermarket didn’t have the rice recommended in the recipe so I just a similar one from the express rice range. It made the meal. Without this type of rice, it’s just a bowl of veg! It was surprisingly tasty & we’ll definitely have it again. It’s also quite a versatile. You could add fish or meat or use what ever veg you wanted. But my advice is stick with the express rice. It adds all the flavour.
Thursday night was something that we’d had many times before: Quorn Steak Supper in a Flash. This is a very tasty recipe & is quite simple to make. It takes about 30mins all in all. The recipe comes from the Quorn Cookbook but there isn’t anything similar to it on their website. It’s a real comfort dinner, perfect for those chilly nights on the sofa!

Last nights dinner was a real triumph. Really tasty & perfect for chilling out on a Friday night with a glass of vino. We had Chickpea & Tomato Curry from Cook Vegetarian. It was so easy & quick to prepare and really delicious! This will definitely be a regular on our meal planner. We had brown rice, mango chutney & a splash of the left over Greek yoghurt with it. I hadn’t bought any naan but we had some square tortilla wraps left over & tried those with it. They were perfect. Really tasty but not too filling. Perfect! x
Creamy Mushroom Pasta
Last nights dinner wasn’t a resounding success. First I should’ve bought green beans to go with it but didn’t think about it in time so we had to have peas. They didn’t work. Secondly I felt like there was something missing from the meal. It needed something…don’t know what but definitely something.
The menu came from the ‘value meals’ on the NHS Meal Planner website. It’s very easy to do, cheap & low fat and quick. If only I could figure out what to add to give it more taste…if I can’t then this one will have to removed from the meal planner. Any ideas? x
Continuing on with the healthy eating posts, last nights dinner was a firm favourite. I discovered the recipe on the Cook Veg website after seeing a tweet from them. It takes a little while to make as you have to roast the veg but it’s worth the wait as it is simply delicious.
Roast Veg Pasta
The recipe is easy to adapt for more or less people. We add mushrooms and a sprinkle of italian herbs. We also only use wholemeal pasta. This is an easy & healthy recipe which is low in fat. Most of all it’s very, very tasty! Enjoy x
