Last night’s dinner is one of our regulars. It is one of the lowest calorie dinners I think I could make. It’s from the Quorn Cookbook, although we don’t always use Quorn sausages. I prefer the Linda McCartney ones. They’ve got more flavour.

This dish is really easy to do though it takes a bit of time to simmer. It’s worth the wait though! It’s very tasty & quite filling. A portion equals about 250 calories so its a good one to have if you’re watching your calorie intake. The recipe for this is on the Quorn website, although it has one or two minor differences with the one in the book. This could definitely be made with different types of sausages, including meat ones. Enjoy! x

Last nights dinner has already been removed from the meal planner. It’s not that it was a disaster, but that it just wasn’t very exciting. It wasn’t gross but just pretty bland.

I didn’t help that I forgot to get courgette to go in with it, but it just wasn’t very exciting. I would have it again, but my OH wasn’t really enamoured with it so it’s no more. The recipe, from the value meals section on the NHS Meal Planner website, calls for quite a lot of liquid. This makes it quite sloppy. I put in the recommended amount of curry paste but it isn’t enough if you like a spicy curry, which we both do. I’m glad we tried it but I’d give this one a bit of a wide birth.

Last nights dinner wasn’t a resounding success. First I should’ve bought green beans to go with it but didn’t think about it in time so we had to have peas. They didn’t work. Secondly I felt like there was something missing from the meal. It needed something…don’t know what but definitely something.

The menu came from the ‘value meals’ on the NHS Meal Planner website. It’s very easy to do, cheap & low fat and quick. If only I could figure out what to add to give it more taste…if I can’t then this one will have to removed from the meal planner. Any ideas? x

Continuing on with the healthy eating posts, last nights dinner was a firm favourite. I discovered the recipe on the Cook Veg website after seeing a tweet from them. It takes a little while to make as you have to roast the veg but it’s worth the wait as it is simply delicious.

The recipe is easy to adapt for more or less people. We add mushrooms and a sprinkle of italian herbs. We also only use wholemeal pasta. This is an easy & healthy recipe which is low in fat. Most of all it’s very, very tasty! Enjoy x
